What you’ll need…
- 1/4 tsp. nutmeg
- 1 1/2 tsp. salt
- 1 1/2 lbs. boneless veal stew
- 1 c. chicken broth or bouillon
- 1/2 c. sherry
- 1/4 lb. fresh mushrooms
- 1 T. instant minced onion
- 1 ·T. finely chopped parsley
- 2 (8 oz.) cans tomato sauce with tomato bits
- Large dash of garlic powder
Season meat with nutmeg and salt. Brown in pan using non-caloric spray. Add broth, wine, mushrooms, onion, tomato sauce garlic powder. Cover and simmer until meat is tender, about 1 hr. Just before serving sprinkle with parsley. On low sodium diets all salts should be replaced with either powder; e.g. garlic powder, onion powder, or salt substitutes. Soy sauce teriyaki sauce, worcestersh1re sauce, bouillon, lemon-pepper marinade and regular mustard are not allowed. There are low sodium substitutes available at Health Food Stores and in the Health Food Section of your market.
