Peanut Butter Mouse

Ingredients:

  • 1 (8-ounce) block cream cheese or nondairy cream cheese such as Tofutti brand
  • 1 cup creamy peanut butter
  • 1 tablespoon pure vanilla extract
  • 1 cup confectioner’.s sugar, sifted
  • 1 cup heavy cream or nondairy whipping cream for parve I like Richwhip brand)
  • 6 ounces chocolate chips, optional for garnish
  • 1 tablespoon corn syrup or vegetable shortening such as Crisco, optional for garnish

Preparation

In the bowl of an electric stand mixer, beat the cream cheese. peanut butter in vanilla extract on medium speed until smooth. Add the confectioners sugar blend on high speed until well-incorporated.

When the mixture is combined and smooth, pour in the cream. Mix on low speed and then beat on high for 4 minutes.

Pour into serving dish. Refrigerate for 20 minutes or more until firm.
If making the garnish, melt the chocolate with the corn syrup or shoilc1111H/ 111 a small container in the microwave, on medium power for 2-3 minutes.
