Red Rice

Ingredients:

  • 2 cups raw long-grain rice, such as Uncle Ben:S Converted Original
  • 1 (5-ounce) can tomato sauce
  • ¼ cup ketchup
  • 1 teaspoon fine sea salt
  • 2 cups water
  • 1 cup frozen mixed vegetables (peas, carrots, green beans, and corn)

Preheat oven to 350°F. Pour the rice into a 9-by-13-inch or large oval oven-to-table baking dish. Add the tomato sauce, ketchup, salt, and water. Stir to combine. Stir in the frozen vegetables. Cover tightly with foil.

Bake for 1 hour. Remove the foil; allow to stand at room temperature for 5 minutes. Scrape a fork over the grains in all directions to fluff rice and distribute the sauce.
