Ingredients:
- 4 (9-ounce) bags fresh spinach leaves
- ½ cup sesame seeds
- 2 tablespoons soy sauce
- 2 tablespoons roasted or toasted sesame oil
- 2 tablespoons sugar
Pour ½-inch water into a large pot. Add the spinach. Bring the heat to medium and cover the pot. Cook the spinach for 2-3 minutes, or until hot and just wilted. Dr, 1111 the water, pressing out as much as possible. Return the spinach to the pot.
Meanwhile, in a small frying pan, spread the sesame seeds in a single layer and heat them over medium heat for 30-60 seconds, or until they turn golden-brown and start to pop. Remove from heat. In a small bowl, mix the soy sauce, sesame oil, and sugar until it dissolves.
Add this soy-sauce mixture to the spinach.
Divide the spinach into thirds and place each onto a piece of parchment or paper sushi mat. Roll it, using the paper to help form it into a skinny log. Cut each log into slices about 1-inch thick and dip one end of each slice and toasted sesame seeds.
