Ingredients:
- 2 Granny Smith apples, cored and thinly sliced
- 2 teaspoons lemon juice
- fine sea salt
- freshly ground black pepper
- ½ cup sour cream or nondairy sour cream, such as Tofutti brand
- ¼ cup apple cider
- ½ teaspoon sugar
- 1/2 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ cup walnut halves
- 1 head endive lettuce, separate
- 4 ounces mesclun lettuce or micro greens
- sweetened dried cranberries, such as Craisins
Place the sliced apples into a bowl and toss with the lemon juice to hold. Season with salt and pepper. In a small bowl, whisk the sour cream with the apple cider, sugar, cinnamon, nutmeg. Set aside. On 6 salad plates, arrange the apples in concentric circles of overlappinq form a “bed” on each plate.
