Apple Walnut Salad with Creamy Cider Dressing

Ingredients:

  • 2 Granny Smith apples, cored and thinly sliced
  • 2 teaspoons lemon juice
  • fine sea salt
  • freshly ground black pepper
  • ½ cup sour cream or nondairy sour cream, such as Tofutti brand
  • ¼ cup apple cider
  • ½ teaspoon sugar
  • 1/2 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup walnut halves
  • 1 head endive lettuce, separate
  • 4 ounces mesclun lettuce or micro greens
  • sweetened dried cranberries, such as Craisins

Place the sliced apples into a bowl and toss with the lemon juice to hold. Season with salt and pepper. In a small bowl, whisk the sour cream with the apple cider, sugar, cinnamon, nutmeg. Set aside. On 6 salad plates, arrange the apples in concentric circles of overlappinq form a “bed” on each plate.
