Caramelized Nuts

Place the nuts into a large bowl. Bring the sugar, water, and honey to a boil in a small pot over medium heat. Stir the mixture until the sugar is dissolved.

Pour the sugar mixture over the nuts and stir until well coated.
Transfer the nuts with a fork or slotted spoon onto one of the prepared baking sheets, and arrange in a single layer, leaving the syrup in the bowl.

Bake for 10-12 minutes, until the nuts are caramelized and golden. If you want them to look smooth and shiny, do not stir them. If you want them to look caramelized and candied, toss them with a greased slotted spatula halfway through the baking time. Spread the nuts on the second prepared baking sheet, separate any clusters, and cool completely.

  • 8 ounces unsalted nuts, such as almonds, pecans, walnut halves, cashews, or any combination
  • ½ cup sugar
  • ¼ cup water
  • 1 ½ tablespoons honey
