Strawberry Streusel Cake


  • 2 cups all-purpose flour ½ cup sugar
  • 1/2 teaspoon fine sea salt
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 2 large eggs
    • ¾ cup all-purpose flour
    • 1 cup sugar
  • 1 tablespoon ground cinnamon
  • 1 cup milk or soy milk
  • ½ cup canola or vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1 (10-ounce/ jar thick strawberry Jani or preserves
  • 1 teaspoon pure vanilla extract
  • 6 tablespoons (¾ stick) unsalted butter or margarine, melted


Preheat oven to 375. Spray a 9½-inch springform pan with nonstick cooking spray. Set aside.

In the bowl of an electric stand mixer, combine the flour, sugar, salt, baking powder and cinnamon. Add the eggs and beat on medium speed. Add the milk, oil. pure vanilla. Beat until the mixture is smooth.

Pour the batter into the prepared pan. Spoon the strawberry jam over the batter. Use a knife or spatula to make shallow swirls to ripple the jam into the cake batter.

Make the streusel crumb topping: In a medium bowl. use your fingertips to pinch the flour, sugar, cinnamon. vanilla, and melted butter or margarine into coarse crumbs. Sprinkle the streusel crumbs all over the top of the cake.
