spinach quiche

IDD Spinach Quiche


  • (10 oz.) pkg. frozen chopped spinach 3/4 c. non-fat milk
  • 2 eggs, lightly beaten
  • 3/4 c. shredded Swiss cheese
  • 1/2 tsp. salt
  • Pepper
  • 4 T. finely chopped green onion
  • 8 fresh mushrooms, thinly sliced
  • Nutmeg

Cook spinach according to pkg. directions. Drain well. Heat milk until hot. Remove from heat. Stir in sp.inach, eggs, cheese, salt, dash of pepper, onion and mushrooms. Blend well. Turn into casserole sprayed with non-caloric spray. Sprinkle top with dash of nutmeg. Place in pan of hot water. Bake at 325° for 50 mins. or until knife inserted in center comes out clean. Serves 4.
