Garlic Horicots Verts Omondine


  • 2 tablespoons olive oil
  • 1 tablespoon butter or margarine
  • 1 pound haricots verts, trimmed
  • 5 whole garlic cloves, peeled
  • ½ cup slivered almonds
  • 1/8 teaspoon fine sea salt
  • 1/8 teaspoon freshly ground black pepper

Place the oil and butter or margarine in a large skillet over medium-low heat. WI H •11 it is melted, add the haricots verts. Cover and steam for 3 minutes. Uncover and allow few times during the steaming process. Haricots verts will take a shorter time; recover green beans will take closer to 5 minutes. Meanwhile, slice the garlic cloves into matchstick pieces, resembling the shave the slivered almonds. Once the green beans have turned a brighter shade of green, uncover then add the sliced garlic. Saute for 2-3 minutes, tossing, until garlic is fragrant and browned.

Add the slivered almonds, salt, and pepper Mix well; saute for 2-3 minutes. Serve hot.
