Bloody-Mary-Marinated London Broil

Score the meat on both sides, making shallow diamond-shaped cuts. Set the meat into a shallow non-reactive baking dish such as Pyrex or glass. In a medium bowl, whisk the tomato juice, lemon juice, lime juice, horseradish, Worcestershire sauce, garlic, hot sauce, celery salt, oregano, salt, and black pepper.

Pour the marinade over the meat and let stand at room temperature. Meanwhile, grease a barbecue grill or grill pan lightly with olive oil and preheat it.

Remove the meat from the marinade, pouring the marinade into a small pot, and sear the meat for IO minutes per side. Meanwhile, heat the marinade over medium heat. Bring to a simmer for 3-5 minutes until slightly thickened. Allow the meat 10 minutes to rest. Thinly slice on the diagonal. Serve the slices with the sauce on the side or drizzled over the top.

  • 1 large shoulder London broil, about 3 pounds cup tomato juice
  • 1 tablespoon lemon juice
  • 1 tablespoon lime juice
  • 1 tablespoon prepared white horseradish
  • 1 tablespoon Worcestershire sauce
  • 2 cloves fresh garlic, minced
  • 2 dashes hot sauce, such as Tabasco or Franks Red Hot
  • ½ teaspoon celer y salt
  • ½ teaspoon dried oregano
  • ½ teaspoon fine sea salt
  • ½ teaspoon freshly ground black pepper
  • Olive oil
