Sole with Crabmeat

What you’ll need:

  • 1 T. Shallots
  • 1/4 C. chopped onion
  • 8 fresh mushrooms, sliced
  • 6 oz. crabmeat
  • Large dash salt/pepper
  • Garlic powder
  • Few drops hot pepper sauce
  • 1 T. chapped parsley
  • Dash sherry
  • 8 fillets of sole

Saute shallots, onion and mushrooms until tender. Add crabmeat, salt, pepper, garlic powder, not pepper sauce, parsley, cumin, and sherry. Cook and stir until blended and reaching a dry consistency. In baking dish, cover 4 fish fillets with stuffing. Place remaining 4 fillets over the stuffing and bake at 325 degrees for 12-15 minutes.
