IDD Whitefish Supreme

Here’s what you’ll need:

  • 2 lbs. white fish, halibut, sole, red snapper or haddock
  • 1 large lemon
  • Onion salt
  • Fresh dill or dill weed
  • 2 tsp. chicken stock base or 1 chicken bouillon cube
  • 1 c, hot water
  • 2 tsp. grey Poupon mustard
  • 2 T. plain yogurt

Lightly sprinkle fish with lemon juice, onion salt and dill, Cover loosely with foil for about 45 minutes. Dissolve chicken stock in water. Blend in mustard. Mix well. Heat until boiling. Blend in yogurt. Simmer for 2-3 minutes, Broil fish for 14 minutes. Spoon sauce over fish and broil 3 minutes longer. Serves 4. On low sodium diets all salts should be replaced with either powders; e.g. garlic powder, onion powder, or salt substitutes. Soy sauce, teriyaki sauce, Worcestershire sauce, bouillon, lemon-pepper marinade and regular mustard are not allowed, There are low sodium substiĀ­tutes available at Health Food Stores and in the Health Food Section of your market.
